This is a delicious, high-quality pork with sweet fat that makes the most of the characteristics of three breeds: the native Ryukyu Yanbaru Island Agu (high in fat but rich in flavor), Duroc (which tends to have marbling in the loin), and Berkshire (a black pig with finely textured red meat).
